The Ingredients

  • 2 eggs
  • 3 teaspoons baking powder
  • 1 teaspoon liquid vanilla
  • Pinch of salt
  • 1 cup cranberries
  • 2 cups flour
  • 1/2 cup vegetable oil
  • 60 grams of Baker’s Choice
  • 3/4 cup sugar
  • 1 cup milk

How to prepare

  1. In a bowl, mix the dry ingredients (flour, sugar, baking powder) and set them aside.
  2. In another bowl, with an electric hand mixer, mix the eggs and vanilla for five minutes, until the eggs are creamy and foamy.
  3. Add milk, oil and melted Baker’s Choice to eggs.
  4. Pour the second mixture over the first mixture, and gradually add the flour while stirring continuously until you have a thick, cohesive cake mixture.
  5. Preheat the oven to 185°C.
  6. Pour the mixture into the ovenproof muffin cups (half a cup).
  7. Sprinkle the cranberries inside each cup, stir slightly, then put the cups into the oven for 15-20 minutes.
