Apricot and marzipan loaf

The Ingredients

the dough
  • 2 cups flour
  • 1 1/2 cups ground almonds
  • 2 teaspoons baking powder
  • 1/4 cup light brown sugar
  • pinch of salt
  • 1 3/4 cup full fat milk
  • 70gm baker’s choice, melted
  • 1/2 cup peeled almonds
  • 500 gm ripe apricots, without seeds (halves)
  • 1 cup light brown sugar

How to prepare

  1. In a bowl, put the apricots, sprinkle with brown sugar, and leave for about an hour.
  2. Roast lightly ground almonds.
  3. Mix the flour with the almonds and the dry ingredients.
  4. Add milk and melted butter and mix until smooth.
  5. Rotate the dough in a greased baking tray, measuring approximately 4 cm high.
  6. Distribution of apricots evenly, with the divided surface facing up, and placing an almond in the middle.
  7. Bake in a preheated oven ten minutes before to 180 C on the middle shelf for about 25 minutes.
  8. Serve warm with vanilla ice cream if desired.
